In 2010, Franck Choisne was instrumental in obtaining an amendment to the 1988 Decree forbidding the use of fennel in absinthe. According to historical recipes belonging to the distillery, fennel is an essential ingredient for producing authentic absinthe. To celebrate this historic event and his personal victory, in 2010 Franck Choisne created a green absinthe, naturally coloured with chlorophylle which he called L’Entêté, (stubborn in French). The plants are distilled and fresh leaves are infused to release their aroma and colour in the traditional manner. Fresh and herbaceous, L’Entêté is true to the spirit of the great absinthes of the 19th-century.
