Cerises semi confites

After harvesting, the cherries are sorted and then macerated in a neutral alcohol. They are then stoned and put back to macerate in an alcoholic mixture containing sugar and Kirsch. This produces a product with a very fine taste, suitable for consumption on its own or to garnish your ice creams, pastries or chocolates. Some gourmets use it to decorate game or foie gras recipes.
